Recipe: Parmigiano Reggiano And Asparagus Tart





Celebrate the start of the British Asparagus Season on the 23rd April with this simple and savoury Parmigiano Reggiano and Asparagus tart recipe.

Start by brushing rectangular pastry sheets with beaten egg and top with pesto, Parmigiano Reggiano and mascarpone cheese. Meanwhile, blanche asparagus and place the spears across the tart. Sprinkle over lemon zest and grated Parmigiano Reggiano and bake until golden brown. Serve with Parmigiano Reggiano shavings and basil for a fresh and flavoursome finish!

Parmigiano Reggiano cheese, known as 'Parmesan', is one of the world's oldest and richest cheeses - still produced today as it was nine centuries ago. Totally natural - it's the only cheese that has such an extensive maturation which improves the nutrition, aroma and taste. The use of raw milk and the richness of natural ingredients make this cheese a unique and superior product - It takes 16 litres of milk to produce one kilogram of cheese! The minimum maturation time for Parmigiano Reggiano cheese is 12 months, but only when it reaches approximately 24 months of age, is it at its best. As well as having fantastic nutritional qualities, it's easy to digest and is high in calcium.

Parmigiano Reggiano cheese is a PDO (Protected Designation of Origin) product. PDOs are defined and protected by European Union law in order to defend the reputation of regional foods. This mark ensures that Parmigiano Reggiano cheese can only be produced in designated areas of Parma, Reggio Emilia, Modena, Bologna to the west of the Reno River and Mantua to the east of the Po River.

Parmigiano Reggiano and Asparagus Tart Recipe

Serves 2

Ingredients

210 x 20cm puff pastry rectangles

1 egg, beaten

2 tbsp green pesto

30g Parmigiano Reggiano, shaved

4 tbsp mascarpone cheese

6 asparagus spears

Finely grated zest of 1 lemon

2 tbsp Parmigiano Reggiano, grated

Torn basil leaves, to serve

Salt and black pepper

Method

Preheat the oven to 200°C

Place the pastry rectangles on a greased baking sheet and carefully score lines 1cm away from the pastry edges with a sharp knife.

Prick the inner rectangle with a fork and brush with beaten egg.

Spread a thin layer of pesto all over the base of the inner rectangle and top with shaved Parmigiano Reggiano and small spoonfuls of mascarpone cheese.

Blanch the asparagus spears for 1 minute in boiling salted water, drain, and place 3 spears across each tart.

Sprinkle a little lemon zest and grated Parmigiano Reggiano over each tart and bake in the oven for 15-20 minutes until the pastry is golden brown and risen.

Serve the tarts with shaved Parmigiano Reggiano and freshly torn basil leaves

Wine suggestion:

Big, oaky Chardonnays or tannic heavy red wines tend to be too over powering for asparagus, so instead look towards serving a vibrant, light and crisp white wine such as a Sauvignon Blanc, a Riesling or even a delicious rosé. If, like some, you simply can’t go without red wine, then you could look towards a light and fruity New World Pinot Noir. One that is light in body with very little tannins so not to impact on the asparagus flavours.
