Cabernet Sauvignon Food Match: Steak With Blue Cheese Recipe





Cabernet Sauvignon wines are notoriously hearty and rich, boasting sturdy tannins with heavy texture and therefore they need a suitably powerful culinary match such as a rare steak, covered in blue cheese…

Ingredients

2 fillet mignon steaks

1 tbsp mustard

55g blue cheese

2 garlic cloves, chopped

Balsamic vinegar

Olive oil

Salt and pepper

Method

Mix the oil, vinegar, garlic, mustard and seasoning in a large bowl, add the fillets and marinate for 30 minutes.

Grill the fillets under a high heat according to taste. Just before the fillets are done, cover them with blue cheese and pop them back under the grill to melt the cheese.

Season to taste.

Serve with green beans and mushrooms.

A stellar example of not only the innovative winemaking techniques now commonplace in South America but also the excellent Cabernet Sauvignons available in Chile, this wine matches delightfully with the natural juices of a rare steak. Great depth and supported with fine tannins this spicy, dark berry flavoured claret is more than a match for the sharp and fragrant blue cheese.
