Spirit of the Month: Martell XO Cognac





Each month CellarVie Wines celebrates one of our listed spirits by recommending four cocktails, one each week, that best showcase the unique flavours of the spirit in question. CellarVie Wines are proud to promote Martell XO Cognac; a spirit that is almost certainly best enjoyed neat or with a splash of water, but let’s not get bogged down in the detail.

Did you know: In the aftermath of King Louis XIV death in 1715, Jean Martell, a sprightly young merchant from Jersey, inspired by the recently deceased Monarch’s legacy of artistry and craftsmanship, founded the very first of the major Cognac houses on the beautiful banks of the Charente River. Over the last 300 years, the House of Martell Cognac have become one of the most widely championed and renowned expert blenders in the world.

Martell are famed for their very distinctive double distillation method, which takes place in traditional Charentais alembics (pot stills). They are used meticulously in order to extract the necessary essence of the wine, called eaux-de-vie. Martell’s constant vigilance during the ageing process is legendary.

The grapes are sourced from four of the finest growth areas in the Charente region; Borderies, Grande Champagne, Petite Champagne, and Fins Bois.

Each cognac is a specific blend of eaux-de-vie from different years and different crus and Martell favour blends that confer finesse, elegance and a floral character.

TASTING NOTES

A spicy, rich crescendo starting with the mellow elegance of the Borderies, followed by the intensity and finesse typical of Grande Champagne eaux-de-vie.

Aspect

Golden amber with dark copper and mahogany highlights.

Nose

Ground spice (black pepper, coriander) and red berries.
Rich fruit flavours: fig chutney and compote, almonds and walnuts.
Beeswax and sandalwood.


Mouthfeel

Rounded and fruity on the palate (notes of fig and walnut) followed by the characteristic power and finesse of eaux-de-vie from Grande Champagne.
