The Diamond Jubilee: What to eat and drink





In true British style it looks like the warm weather is not going to last over the Diamond Jubilee Bank Holiday, but that will not stop us from spilling out onto the streets in our droves to celebrate the remarkable 60-year reign of Elizabeth II. If you are going to brave the outdoors this weekend then the wine needs to be chilled and the food needs to be easy to eat with your fingers.

The coolest thing to drink at the moment is UK sparkling wine and more importantly there is nothing more apt that toasting our Monarch with a nice bit of English fizz. Those in the know are starting to compare British bubbles with Champagne due to the quality of the wine being produced in the South of England. The soils and climate are very similar to the famous Gallic region and so with the same growing conditions and improved winemaking expertise the results are starting to excite. In fact the Queen was the first British monarch to serve English Sparkling at a State occasion rather than Champagne a few years ago and she must know a good glass of something when she tastes one.

When it comes to the Queen’s favourite tipple she goes for a Dubonnet and Gin, or “Gin and French” - a more potent version of the most English of summer drinks Pimm’s. If you are having Pimm’s this weekend then you can spruce it up with a hearty measure of Gin and it’ll taste more akin to the Monarch’s drink of choice or alternatively try making the Pimm’s with Ginger Beer instead of lemonade to add a little spice.

When you are thinking of food perhaps Coronation Chicken is a little too obvious but your culinary inspirations should be British so to continue the patriotic mood currently swelling the country.

Many will be firing up their barbeques if the weather is not too hostile so why not adapt the Sunday roast by grilling pork steaks, marinated in a touch of Lea and Perrins and serve with apple sauce. Or make your own lamb burgers with some fresh mint chopped into the mix and served with a dollop of cucumber, yoghurt and mint salsa.

When it comes to puddings then trifle has to be one of the most British of puddings, alongside syllabub or perhaps a delicious Eton Mess. If you want to go all out on the red, white and blue, a simple way of making a sponge fit for a Queen is to fill it with your favourite jam and cream, smother the top of the cake with whipped cream and then use fresh raspberries and blueberries to make the shape of the Union Jack – not only does it taste good but it will look spectacular in the middle of the table.
