Recipe: Pan Fried Prawns with Garlic butter





When the sun is out not only do you want to be outside you also don't feel like eating anything heavy. Pan Fried Prawns with Garlic Butter is a light and simple dish matched to an award winning Italian wine Fontana Candida's Frascati Superiore Vigneto Santa Teresa 2009, also perfect for the warm weather. 

Ingredients:

1 kg king prawns
 
For the butter:
450g salted butter
50g chopped parsley
5 cloves garlic finely chopped.

Cooking:

Allow the butter to soften and beat together with parsley and garlic. Leave to set again in the fridge for an hour.
 
Heat a frying pan with a splash of olive oil, throw in the prawns and about a quarter of the butter. Bring to a sizzle and serve once the prawns have turned pink. You can freeze the rest of the butter for another occasion.
