Recipe: Roast Chicken





This lovely recipe for roast chicken is the perfect match for a warming red from the Côtes du Rhône. We've picked La Dentelière 2010 from our Rhône wines. Made from Grenache with some Syrah, Cinsault and Mourvèdre it's a lovely easy drinking red wine.
 
Ingredients:

1 x 1.5 kg chicken
Half lemon finely sliced
Bunch of fresh tarragon
2 cloves garlic
Olive oil
10 fl oz white wine
Salt and freshly ground black pepper
Preheat oven to 230C

Cooking:

Lift the skin away from the flesh and push the tarragon between the skin and flesh. Rub the chicken with the olive oil, salt and pepper. Place the lemon slices in a roasting dish, pour the white wine over and place chicken on top. Roast in pre-heated oven for an hour and a half at 230C.
