Recipe: Smoked trout with horseradish dressing





We know what you're thinking - Trout and horseradish? Trust us it is a match made in heaven with the piquant horseradish dressing working beautifully with the rich smoked trout.  We've paired this dish with Kleine Zalze Bush Vines Chenin Blanc a tropical-fruit flavoured Chenin Blanc that is supple and seductive and has picked up a couple of Silvers in international competitions. It is not overtly fruity but it is a great glass of South African white from a grape variety that is often forgotten about.  
 
Recipe:
 
Smoked trout with horseradish dressing and bitter leaf salad
 
Ingredients:
 
1 bag mixed salad leaves – rocket, watercress, baby spinach
4 smoked trout fillets
 
Dressing:
 
2 teaspoons creamed horseradish
3 dessertspoons virgin olive oil
Half teaspoon Dijon mustard
Splash of cider vinegar to taste
 
Method:
 
Arrange salad on plate and sprinkle with a little salt and pepper and a drizzle of olive oil. Place smoked trout fillet on salad. Mix all of the dressing ingredients together till smooth and creamy, drizzle over the salad and trout. Serve.
