The Codorníu dynasty have been producing wines in this iconic region since the middle of the 16th century and applying the Traditional Method, as used to make Champagne, since 1872. This beautifully elegant wine is named after the last member of the Codorníu family who married Don Manuel Raventos, whose descendants still lead the company today.

The doyenne of Spanish sparkling wine, Cava has enjoyed much success of late, especially as an affordable and quality alternative to Champagne.

Cava is made using the traditional method of sparkling wine production (second fermentation in the bottle as opposed to in a large vat) and its main grapes are native varieties of Parellada, Xarel-lo and Macabeo. Having said that, Pinot Noir and Chardonnay (two of the grapes used in Champagne) are starting to creep into the production of Cava too.

The majority of Cava is made in Catalonia, and within that north eastern part of Spain, most is made in the region of Penedès.

A major contribution of Cava’s to the world of traditional sparkling wine production has been the introduction of gyropalettes; large metal cubes in which bottles of Cava are stacked then twisted and turned until the sediment from the second fermentation ends of in the top of the bottle neck (so it is ready to be removed). Gyropalletes are a common sight in Champagne these days too.

Two companies dominate the cava production scene: Freixenet and Codorníu.

Pinot Noir

Pinot Noir has been planted in Burgundy since the 14th Century (with evidence suggesting it has been planted here since the 4th Century!). Following Burgundy would be Champagne as Pinot Noir’s 2nd home, and of course this grape is often used in Champagne. Unfortunately due to its thin grape skin Pinot Noir is difficult to grow and cultivate, hence it has taken a while for it establish itself outside France. Regions where it has been successful and where premium Pinot Noir are now being produced are California, New Zealand and Australia.

Pinot Noir has great affinity with Oak and young wines typically display a fruit perfume of raspberries, strawberries and red cherries. Due to the thin grape skin Pinot Noir usually has soft, light tannins and is seldom deep in colour. Pinot Noirs tend to age unpredictably, leading some to claim that they are at their best for a short period of time. But as many Pinot Noirs can be enjoyed in more than one style this is rather a limited point of view.


Salads & Vegetables
This wine will work very well with olives, asparagus, cucumber and most notably a salmon Caesar salad.
Fish & Seafood 
Works best with lobster, crab and oysters but is also a great match with prawns and smoked salmon - you could even try it with sushi.
Pasta & Other Sauces
An earthy mushroom sauce or a buttery lemony sauce would complement this wine nicely. 
Meats
Light meats would work well with this wine but you could also pair it with veal or duck. 
Herbs & Spices
Mint is great with this wine - you can even pop a leaf in your glass to add another dimension - but it also works well with basil and coriander. 
Spicy Foods
Strongly spiced foods will be more than this wine can handle so stick to the lighter flavours of Japanese cuisine. 
Cheeses
Hard cheeses such as Parmesan and Gouda  are well suited but goat's cheese will work equally well.
