A lovely light dish, extremely healthy and filling at the same time - Chargrilled Tuna is one of Simon's favourites and he's matched his recipe to a lovely Cabernet Sauvignon, Shiraz and Malbec blend, the Flagstone Longitude Cabernet Sauvignon-Shiraz-Malbec 2010
. Full of dark berry fruit - a lovely match! South African wine is growing increasingly popular in the UK market and Bruce Jack's lovely blend is a perfect example as to why!
2 tuna steaks (8oz/225g each)
2 heaped tablespoons of chopped coriander
1 heaped tablespoon of capers
Juice of half a lemon and its zest
One garlic clove, finely chopped
1 tablespoon white wine vinegar
2 tablespoons extra virgin olive oil
Blitz all of the dressing ingredients together apart from the capers and set to one side, adding the capers whole.
Heat grill, griddle or frying pan with a dash of olive oil. Place tuna in pan once the oil is nice and hot. Cook on each side for 3 minutes. Serve with the dressing.
